This course is to study the theories and principles of food production; types, organizational structures, and characteristics of various kitchen in restaurant business; careers in food service business; basic nutrition, sanitation and food safety; knowledge on raw materials, weights and measures, kitchen equipment, purchasing and storing raw materials, types of food, food production techniques and processes; and include practical lessons.
